Ingredients for 7-8 Servings

  • 1/2 cup
    butter, melted
  • 3/4 cup
    light brown sugar, packed
  • 1
    large egg
  • 1 cup
    flour
  • 1/4 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 2/3 cup
    shredded carrots
  • 4 ounces
    cream cheese, room temperature
  • 1/4 cup
    granulated sugar
  • 1
    large egg yolk
  • 3/4 tsp
    vanilla extract

Method

  1. Preheat oven to 375.
  2. In a large bowl, combine butter and brown sugar, then mix in the egg and vanilla extract. With a rubber spatula, fold in the flour, baking powder, cinnamon, and salt, adding the carrots last. Set aside.
  3. In a small bowl, beat together the cream cheese and sugar until smooth, then add the vanilla and egg yolk.
  4. Grease a medium baking dish. Fill with carrot batter, then fold in the cream cheese mixture. Mix as well or as little as you like.
  5. Bake for 30-45 minutes or until slightly firm on top. Serve warm.
